Tendons cells and every other tissue cell, comprise of proteins, enzymes, and these require homeostasis, in other words, balance to stay healthy.  When their environment goes out of balance, whether it be in the case of this video, through temperature or PH change, they denature.  This video explains the optimal temperatures as well as PH that proteins thrive in, as well as what happens when they denature.
